Latin Spiced Chicken Wings with Honey-Lime Glaze and Chipotle Yogurt Dipping Sauce

Serves: 2 to 4

Through the Garden of Dreams Foundation, Gaby is in store for a huge shock as MSG Networks' Jill Martin surprises her with an amazing culinary encounter.

Chipotle Yogurt Dipping Sauce

  • 1 cup 2% yogurt, such as Siggi’s
  • 1 chipotle in adobo, finely chopped or pureed
  • 1 teaspoon pure chile powder, such as ancho
  • ¼ teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper

Whisk together the yogurt, chipotle, chile powder, salt and pepper in a small bowl until combined.Cover and refrigerate while you make the wings to allow the flavors to meld.

Honey-Lime Glaze

  • ¼ cup clover honey
  • Finely grated zest of 1 lime
  • Juice of 1 lime
  • ¼ teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper

Whisk together the honey, lime zest and juice, salt and pepper in a large bowl (you will toss all the wings in the glaze after they are cooked.) Let sit at room temperature while you prepare the wings.

Fried Chicken Wings

  • 3 cups canola oil
  • 1 tablespoon kosher salt, plus more for seasoning
  • 2 teaspoon granulated garlic powder
  • 2 teaspoon granulated onion powder
  • 2 teaspoon ground turmeric
  • 1 teaspoon ground Aji Amarillo
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon dried Mexican oregano
  • 12 chicken wings, tips removed and cut in half at the joint, rinsed with cold water and patted dry
  • 2 tablespoons finely chopped fresh cilantro leaves

1. Put the oil in a medium saucepan and heat over medium heat until it just begins to shimmer or it reaches 350 degrees F on a deep-fry thermometer. Line a baking sheet or large plate with a few layers of paper towels.

2. Mix together the salt, garlic and onion poser, turmeric, Aji Amarillo, black pepper, and oregano in a small bowl.

3. Put the wings in a bowl, season lightly with salt and pepper on both sides. Add the spice mixture and toss well to make sure the wings are completely seasoned with the rub. Fry the wings in batches until golden brown and cooked through about 10 minutes. Remove with a spider or slotted spoon to the prepared baking sheet and let drain for a few minutes.

4. Transfer the wings to the bowl with the glaze and toss well to coat. Transfer to a platter and sprinkle the cilantro over the top. Serve with the Chipotle-Yogurt Dipping Sauce on the side.
